Sweetheart Sandwich Cookie Recipe

When I was brainstorming about Valentine's Day blog posts, my first thought was a cake that looks like an actual human heart. 

But that, my friends, is beyond my skill level. I'll try to get a degree in anatomy real quick before next V-day so I won't disappoint you again. 

Instead, I put together some very cute, very yummy and pretty easy Sweetheart Sandwich Cookies. They're heart-shaped sugar cookies with a divine chocolate filling finished with sprinkles for extra cuteness. 

Sweetheart Sandwich Cookie Sugar Cookie Supplies

  • Baking tray
  • Baking paper
  • Rolling pin
  • ½ cup sprinkles
  • Heart-shaped cookie cutter
  • Piping bag with large round tip (you can spread filling if you don't have this)

Sweetheart Sandwich Cookie Sugar Cookie Ingredients
makes 10 sandwich cookies (20 hearts)

  • ½ cup (113g) butter, softened
  • 1 cup sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • ¾ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons milk

Sweetheart Sandwich Cookie Sugar Cookie Instructions

1. Preheat oven to 180C/350F

2. Cream butter and sugar together in an electric mixer

3. Add egg and vanilla to butter and sugar and beat together

4. Stir together flour, baking powder, baking soda and salt in a separate bowl

5. Alternating adding the flour mixture and 2 tablespoons of milk until it’s all added and well combined

6. Scoop half of the dough out onto a sheet of baking paper and place another sheet of baking paper on top of it

7. Use a rolling pin (or a wine bottle if you don’t have a rolling pin) to roll the dough out to about half a centimetre thickness, keeping it as rectangular as possible (you want it to end up about the size of a baking sheet; about 24cm wide and 28cm long)

8. Bake for 10 minutes or until slightly golden around the edges

9. Carefully remove the baked rectangle from the tray and repeat with the other half of the dough

10. When both sheets of cookie are cooled, use a heart shaped cookie cutter to cut out 20 hearts (may vary depending on the size of your cookie cutter)


Chocolate Sandwich Cookie Filling Ingredients

  • 200g milk or dark chocolate
  • ½ cup (113g) butter, softened
  • ¾ icing sugar
  • 1 tablespoon milk

Chocolate Sandwich Cookie Filling Instructions

1. Break chocolate into pieces and put in a microwave safe bowl

2. Microwave in 20 second increments until chocolate is at melting point then gently stir until smooth

3. Allow to cool (about 20 minutes)

4. When chocolate has cooled, beat butter and sugar in electric mixer until light and fluffy

5. Add cooled chocolate and beat until smooth

6. If it looks too stiff to pipe or spread easily, add the milk


Sweetheart Sandwich Cookie Sugar Cookie Assembly

1. Scoop chocolate filling into piping bag fitted with large round tip or get spreading utensil ready

2. Pipe or spread filling onto half of the sugar cookie hearts and place the other hearts on top, squeeze together gently

3. Use your (clean!) finger or a small spoon to smooth the filling

4. Pour your sprinkles in a small dish and press the sandwich cookies one-by-one into the sprinkles until the filling is coated on all sides
